In Praise of Silpat
Print Options
I got my first set of Silpat mats a year ago and I'm absolutely in love with them. Those who use Silpat will of course know of what I praise. To those who don't, Silpat is a wonderful stick-free baking mat made of silicone-coated fiberglass. Use it in place of parchment paper on a baking pan for making cookies, rolls, candy, or roasted vegetables. No butter or oil sprays necessary.
Silpat mats are made in France by the De Marle company which makes flexible silicone bake ware. Silpat will withstand temperatures of -40° to 482°F and is microwave safe. The mats are easy to clean; just wipe off with warm soapy water.
You can find Silpat at Sur La Table, Williams Sonoma, and Amazon.com Prices range from $10 to $40 depending on the size of mat.

I first saw these on Amazon.com, most reviews were raves. One concerned cook noted the chemicals that must go into making the mat so super non-stick. As I thought about this, I remembered a Today show segment about non-stick pans and Teflon (they presented it with a tone of instilling fear, and the hosts all "tsk, tsk" at using non-stick pans). Can anyone shed light on this concern? Is it paranoia or is there need for worry?
